First publication of Pasteur's work which preceded the slightly longer 1858 articles in Annales de Chimie et de Physique. A near fine copy with clean uncut pages.

Comments: The first memoir on lactic fermentation that marked the birth of bacteriology. Pasteur's isolation of the organisms which cause milk to sour launched his campaign against the chemical theory of fermentation and "expressed the basic approach and point of view which informed all of his subsequent work on fermentation." DSB X, 362. The volume also contains his first note on alcoholic fermentation, (pp. 1032-36). Horblit 82; GM 2472.
